Ingredients

2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

8 ounces fettuccine pasta

1 cup heavy cream

1 cup chicken broth

1 cup bell peppers (sliced: red, yellow, and green)

1 cup onions (sliced)

3 cloves garlic (minced)

1 cup cherry tomatoes (halved)

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley (chopped, for garnish)

Instructions

Season the Chicken: Pat the chicken breasts dry with paper towels. Rub Cajun seasoning generously over both sides of the chicken.

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and let rest for a few minutes before slicing.

Cook the Pasta: While the chicken cooks, bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

Prepare the Sauce: In the same skillet, add the sliced bell peppers, onions, and garlic. Sauté for 3-4 minutes until the vegetables are soft.

Combine Ingredients: Pour in the chicken broth and heavy cream. Stir well and bring to a simmer. Let it cook for 3-5 minutes to thicken slightly. Adjust seasoning with salt and pepper.

Add Chicken and Pasta: Slice the cooked chicken and add it to the sauce along with the cooked fettuccine and cherry tomatoes. Toss everything together until the pasta is well coated in the creamy sauce.

Finish with Parmesan: Stir in the grated Parmesan cheese and allow it to melt into the sauce. Remove from heat.

Garnish and Serve: Serve hot, garnished with fresh chopped parsley. Enjoy your Creamy Cajun Chicken Pasta!
