1 large head of cauliflower, cut into florets

3 tablespoons unsalted butter

1/2 cup heavy cream (or milk for a lighter option)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

Salt and pepper to taste

Chives or parsley, chopped (for garnish)

Instructions
 

Steam the Cauliflower: In a large pot, add about an inch of water and place a steaming basket over it. Bring the water to a boil, then add the cauliflower florets to the steaming basket. Cover and steam for 8-10 minutes until the cauliflower is tender and easily pierced with a fork.

    Prepare the Garlic: While the cauliflower is steaming, in a small skillet, melt the butter over medium heat. Add the minced garlic and sauté for 2 minutes until fragrant but not browned. Remove from heat and set aside.

      Blend the Ingredients: Once the cauliflower is cooked, transfer it to a blender or food processor. Add the sautéed garlic and butter, heavy cream (or milk), and grated Parmesan cheese. Season with salt and pepper to taste.

        Blend Until Smooth: Pulse the mixture until it becomes creamy and smooth. Stop occasionally to scrape down the sides of the blender or food processor for an even consistency. If the mash is too thick, you can add a little more cream or milk to reach your desired consistency.
