  • 4 large russet potatoes peeled and thinly sliced
  • 2 cups sharp cheddar cheese grated
  • 1 cup Gruyère cheese grated
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3 cloves garlic minced
  • 1 medium onion finely chopped
  • 4 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ¼ teaspoon freshly grated nutmeg
  • Fresh chives chopped (for garnish)

Instructions

  • Preheat your oven to 375°F (190°C).
  • Melt 2 tablespoons of butter in a skillet over medium heat, then sauté the onion until translucent.
  • Add minced garlic and cook for another minute.
  • Sprinkle flour over the mixture, stirring to form a roux, and cook until light golden.
  • Gradually whisk in heavy cream and milk, stirring until the sauce thickens.
  • Remove from heat and stir in salt, pepper, paprika, nutmeg, cheddar, and Gruyère until smooth.
  • In a greased baking dish, layer half of the potatoes, then half of the cheese sauce.
  • Repeat with remaining potatoes and sauce, topping with the last cup of cheddar.
  • Dot with remaining butter and cover with foil, baking for 45 minutes.
  • Remove foil and bake for an additional 15-20 minutes until golden and bubbling.
