Creamy Chicken Lasagna with White Sauce

9-12 lasagna noodles

2 cups cooked chicken, shredded

2 cups ricotta cheese

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

1/2 cup fresh spinach, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon dried basil

1/2 teaspoon salt

1/4 teaspoon black pepper

3 tablespoons olive oil

3 tablespoons all-purpose flour

2 cups chicken broth

1 cup heavy cream

1/4 cup fresh parsley, chopped (for garnish)

Cook the Lasagna Noodles: In a large pot of boiling salted water, cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.

    Prepare the White Sauce: In a medium saucepan, heat the olive oil over medium heat. Whisk in the flour and cook for about 1 minute until it forms a paste. Gradually whisk in the chicken broth, ensuring no lumps form. Once the mixture thickens, stir in the heavy cream. Allow it to simmer for about 5 minutes, then season with garlic powder, onion powder, basil, salt, and pepper. Remove from heat.

      Mix the Filling: In a large bowl, combine the shredded chicken, ricotta cheese, half of the mozzarella cheese, chopped spinach, and a pinch of salt and pepper. Mix well until combined.

        Assemble the Lasagna: Preheat your oven to 375°F (190°C). In a baking dish, start with a layer of the white sauce on the bottom. Place a layer of lasagna noodles over the sauce, then spread half of the chicken filling over the noodles. Add another layer of white sauce, followed by another layer of noodles. Repeat the layers, finishing with noodles and topping with the remaining white sauce and the rest of the mozzarella and Parmesan cheese.

          Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes or until the top is golden and bubbly.

            Garnish & Serve: Once baked, let the lasagna cool for about 10 minutes. Garnish with fresh parsley before slicing. Serve warm and enjoy your creamy delight!
