Creamy Chicken Pasta

Ingredients
  

12 oz fettuccine or your pasta of choice

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and black pepper, to taste

4 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup fresh spinach, roughly chopped

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Instructions
 

Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    In a large skillet, heat olive oil over medium heat. Season the chicken pieces with salt and black pepper. Add the chicken to the skillet and cook for about 5-7 minutes, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      In the same skillet, add the minced garlic and cook for about 1-2 minutes, until fragrant—not browned.

        Stir in the dried Italian herbs and cook for another minute. Then, pour in the heavy cream, stirring to combine. Bring to a gentle simmer.

          Gradually add the grated Parmesan cheese, stirring until melted and the sauce is creamy. If the sauce is too thick, you can add some reserved pasta water until you reach your desired consistency.

            Add the fresh spinach to the sauce and stir until wilted. Squeeze in the lemon juice for added brightness.

              Return the cooked chicken to the skillet, and toss everything together. Finally, add the drained pasta and mix well to coat the noodles in the creamy sauce.

                Serve hot, garnished with freshly chopped parsley.
