Ingredients

  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 3 medium carrots peeled and sliced into rounds
  • 2 stalks celery diced
  • 1 cup frozen peas
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • ¼ cup all-purpose flour
  • 1 cup frozen puff pastry thawed (optional, for topping)
  • Fresh parsley finely chopped (for garnish)

Instructions

  • Heat olive oil in a large pot over medium heat and cook chicken until golden brown, about 5-7 minutes. Remove and set aside.
  • Add onion, garlic, carrots, and celery to the pot and sauté for about 5 minutes until tender.
  • Sprinkle flour over the vegetables, stir to coat, and cook for 1-2 minutes to form a roux.
  • Gradually pour in chicken broth while stirring to prevent lumps. Bring to a gentle simmer.
  • Return chicken to the pot and add peas, heavy cream, thyme, rosemary, salt, and pepper. Stir to combine.
  • Simmer for an additional 10-15 minutes, stirring occasionally until thickened.
  • If using puff pastry, preheat oven to 400°F (200°C), roll out pastry, cut into shapes, and bake for 15-20 minutes until golden.
  • Ladle soup into bowls, top with baked puff pastry, and garnish with parsley.
