1 lb chicken sausage, sliced (smoked or Italian)

1 cup orzo pasta

3 cups chicken broth

1 cup heavy cream

1 medium onion, diced

2 cloves garlic, minced

1 cup spinach, roughly chopped

1 cup cherry tomatoes, halved

1 teaspoon dried Italian herbs (or a mix of basil, oregano, and thyme)

Salt and pepper to taste

2 tablespoons olive oil

Grated Parmesan cheese for serving

Fresh parsley for garnish (optional)

Sauté Sausage: In a large skillet, heat olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove the sausage and set aside.
