Ingredients
  

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

1 carrot, diced

1 celery stalk, diced

1 (28-ounce) can crushed tomatoes

2 cups vegetable broth

1 teaspoon dried basil

1 teaspoon sugar (to balance acidity)

1/2 cup heavy cream

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic, diced carrot, and diced celery. Cook for an additional 5 minutes until the vegetables begin to soften.

      Add the crushed tomatoes, vegetable broth, dried basil, and sugar. Stir well and bring to a boil.

        Once boiling, reduce the heat to low and let it simmer for 20 minutes.

          After 20 minutes, use an immersion blender to blend the soup until smooth, leaving some chunks for texture. (Alternatively, you can blend in batches with a regular blender, but be cautious of the hot liquid.)

            Stir in the heavy cream and season with salt and pepper to taste. Let simmer for another 5 minutes, allowing the flavors to meld.

              Serve hot, garnished with fresh basil leaves. Enjoy with crusty bread or grilled cheese sandwiches!
