  • 1 lb boneless skinless chicken breasts
  • 1 can 15 oz white beans
  • 1 can 15 oz sweet corn
  • 1 medium onion
  • 2 cloves garlic
  • 1 can 4 oz diced green chilies
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 cup low-sodium chicken broth
  • 8 oz cream cheese
  • Salt and freshly ground black pepper
  • Fresh cilantro chopped, for garnish

Instructions

  • Place the chicken breasts at the bottom of the crockpot.
  • Layer the white beans, sweet corn, diced onion, minced garlic, and green chilies over the chicken.
