Creamy Garlic Shrimp Pasta

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

2 tablespoons butter

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Sauté the Shrimp: In a large skillet over medium heat, heat the olive oil and 1 tablespoon of butter. Add the shrimp, seasoning with salt, pepper, and red pepper flakes if using. Cook for about 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.

      Make the Garlic Sauce: In the same skillet, add the remaining tablespoon of butter and minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

        Add Cream and Broth: Pour in the chicken broth and bring to a simmer. Lower the heat and stir in the heavy cream. Allow the mixture to simmer for 3-4 minutes, stirring occasionally, until it thickens slightly.

          Combine Ingredients: Stir in the Parmesan cheese until melted and combined. Add the cooked pasta to the sauce, tossing to coat evenly. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

            Return Shrimp: Add the cooked shrimp back to the skillet and toss everything together gently. Adjust seasoning with salt and pepper as needed.
