8 oz penne pasta

2 chicken breasts, diced

1 cup fresh asparagus, cut into 1-inch pieces

1 cup mushrooms, sliced (cremini or button)

2 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

½ cup grated Parmesan cheese

2 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Penne: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the diced chicken, seasoned with salt, pepper, and Italian seasoning. Cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms, asparagus, and minced garlic. Sauté until the mushrooms are golden and the asparagus is tender, about 4-5 minutes.

        Make the Sauce: Lower the heat to medium. Pour in the chicken broth and bring to a simmer. Gradually stir in the heavy cream, mixing well to combine. Let it simmer for about 3-4 minutes, allowing the sauce to thicken slightly.

          Combine Everything: Add the cooked chicken back to the skillet, followed by the drained penne pasta. Toss everything together to coat the pasta in the creamy sauce. Stir in the grated Parmesan cheese. Adjust seasoning with salt and pepper to taste.
