Ingredients
- 500 g chicken breast diced
- 2 medium zucchini chopped
- 1 red bell pepper diced
- 1 yellow bell pepper diced
- 1 medium onion finely chopped
- 3 cloves garlic minced
- 200 ml heavy cream
- 150 ml chicken broth
- 2 tablespoons sweet paprika powder
- 1 teaspoon dried oregano
- 1 teaspoon thyme
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the finely chopped onion and minced garlic, sautéing for about 2-3 minutes until soft and aromatic.
- Add the diced chicken breast, cooking until golden brown on all sides, about 5-7 minutes.
- Season with salt, pepper, sweet paprika, oregano, and thyme.
- Incorporate the chopped zucchini and bell peppers, cooking for an additional 5 minutes until slightly tender.
- Pour in the chicken broth, stirring well to combine all ingredients.
- Increase the heat until the broth starts to simmer.
- Add the heavy cream, mixing thoroughly, then lower the heat and let it simmer for another 5-10 minutes until the sauce thickens.
- Taste and adjust seasoning with salt and pepper as needed.
- Before serving, sprinkle with freshly chopped parsley.
