8 oz (about 2 cups) rotini or fusilli pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup black olives, sliced

1/2 cup cheddar cheese, cubed

1/2 cup mayonnaise

1/4 cup sour cream

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini or fusilli pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool the pasta.

    Prepare the Vegetables: While the pasta is cooking, prepare the vegetables. In a large mixing bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, and black olives.

      Make the Creamy Dressing: In a separate bowl, whisk together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, garlic powder, and Italian seasoning until smooth. Season with salt and pepper to taste.
