  • 1 lb boneless skinless chicken breasts, diced
  • 1 tablespoon extra virgin olive oil
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 2 cans 15 oz each white beans, drained and rinsed
  • 1 can 4 oz diced green chilies, undrained
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • 4 cups low-sodium chicken broth
  • 1 cup corn
  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste
  • Fresh cilantro chopped, for garnish
  • Lime wedges for garnish

Instructions

  • In a large pot, heat the olive oil over medium heat and sauté the diced chicken for 5-7 minutes until browned.
  • Remove the chicken and set aside. In the same pot, sauté the diced onion for 3-4 minutes until translucent.
  • Add minced garlic and cook for an additional minute until fragrant.
  • Sprinkle ground cumin, chili powder, and smoked paprika over the onions and garlic, mixing well.
  • Return the cooked chicken to the pot and add white beans, green chilies, chicken broth, and corn.
  • Bring to a gentle boil, then reduce heat and simmer uncovered for 20-25 minutes.
  • Stir in heavy cream or coconut milk and heat through for another 5 minutes, seasoning with salt and pepper.
  • Ladle into bowls and garnish with chopped cilantro and lime juice.
