For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsweetened cocoa powder

½ cup granulated sugar

½ cup unsalted butter, melted

For the Cheesecake Filling:

24 oz cream cheese, softened to room temperature

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs

1 cup sour cream

¼ cup all-purpose flour

For the Spider Web Decoration:

1 cup white chocolate chips

1 tbsp coconut oil

Black food coloring

1 cup dark chocolate chips (for the spider)

For the Spider:

1 cup dark chocolate chips

2 tsp coconut oil

Black licorice or chocolate-covered almonds (for the spider legs)

Instructions

Prepare the Crust:

Begin by preheating your oven to 325°F (160°C).

In a mixing bowl, blend together graham cracker crumbs, cocoa powder, granulated sugar, and melted butter. Use a fork or your hands to ensure the mixture is combined and crumbly.

Firmly press this mixture into the base of a 9-inch springform pan, forming an even layer. Bake in the preheated oven for 10 minutes. Once done, remove from the oven and allow to cool completely.

          Make the Cheesecake Filling:

In a large mixing bowl, use an electric mixer to beat the softened cream cheese and sugar until the mixture is smooth and creamy. Add in the vanilla extract and beat until well incorporated.

Introduce the eggs one at a time, mixing thoroughly after each addition to ensure a homogeneous filling. Then, gently mix in the sour cream and flour until just combined without over-mixing.

Carefully pour the cheesecake filling over the cooled crust, using a spatula to smooth the surface.

                  Bake the Cheesecake:

Place the cheesecake in the oven and bake for 60-70 minutes. The edges should be set, while the center remains slightly wobbly. When done, turn off the oven and slightly crack the door open, allowing the cheesecake to cool in the residual heat for about an hour.

                      Prepare the Spider Web Decoration:

In a microwave-safe bowl, melt the white chocolate chips along with the coconut oil, stirring every 30 seconds until silky and smooth. Add a few drops of black food coloring, stirring until you reach a dark gray hue.

Once the cheesecake is completely chilled in the refrigerator (for at least 4 hours or overnight), transfer the melted chocolate to a piping bag. Starting from the center of the cheesecake, pipe concentric circles outward. Use a toothpick or skewer to drag lines from the center to the edges to form the iconic spider web design.

                            Create the Spider:

Over a microwave-safe bowl, melt the dark chocolate chips along with coconut oil until they are fully melted and smooth.

Dip pieces of black licorice or chocolate-covered almonds into the warm melted chocolate, which will serve as the spider's legs. Attach them to a round chocolate piece (or a small truffle or fondant ball) to create the spider's body.

                                  Assemble:

Gently place the finished chocolate spider atop the spider web decoration on the cheesecake. Chill the adorned cheesecake for an additional hour in the refrigerator before serving.

                                      Serve:

When ready to indulge, slice the cheesecake into 12 generous pieces and serve chilled, allowing your guests to enjoy this spooky and delightful dessert!

Prep Time: 30 minutes | Total Time: 5 hours | Servings: 12 slices
