1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper to taste

2 large eggs

1 cup panko breadcrumbs

Vegetable oil, for frying

Sauce Ingredients:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp Sriracha (adjust to taste)

1 tsp lime juice

1 tbsp chopped green onions (for garnish)

Prepare the Chicken: In a large mixing bowl, combine the flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper. Mix well.

    Coat the Chicken: Dip each piece of chicken in the flour mixture to coat, then dip it into the beaten eggs, and finally coat with panko breadcrumbs, pressing slightly to adhere.

      Fry the Chicken: Heat vegetable oil in a deep skillet over medium-high heat. Once the oil is hot (about 350°F or 175°C), add the coated chicken pieces in batches, frying for about 5-6 minutes or until golden brown and crispy. Remove and drain on paper towels.

        Make the Sauce: In a separate bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and lime juice until smooth. Adjust the spiciness by adding more Sriracha if desired.

          Toss the Chicken: Place the crispy chicken in a large bowl, drizzle with the sauce, and toss gently until the chicken is well coated.
