Crispy Bang Bang Chicken

Ingredients
  

1 lb boneless, skinless chicken thighs (cut into bite-sized pieces)

1 cup all-purpose flour

1 cup panko breadcrumbs

2 large eggs

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp paprika

Oil for frying

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tsp sriracha (adjust to taste)

1 tsp lime juice

Optional: sliced green onions and sesame seeds for garnish

Instructions

Prepare the Chicken: In a large bowl, season the chicken pieces with salt, pepper, garlic powder, onion powder, and paprika. Toss to coat evenly.

    Set Up the Breading Station: In one bowl, place the flour. In a second bowl, whisk the eggs until fully blended. In a third bowl, place the panko breadcrumbs.

      Bread the Chicken: Dip each piece of chicken into the flour, shaking off excess, then into the egg, and finally coat with the panko breadcrumbs. Make sure each piece is well coated for maximum crispiness.

        Heat the Oil: In a large skillet or deep frying pan, heat about 1 inch of oil over medium-high heat. To test if the oil is hot enough, drop a small piece of breading into the oil – it should sizzle and bubble.

          Fry the Chicken: Carefully add the breaded chicken pieces to the oil in batches, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side, or until golden brown and crispy. Remove the chicken and let it drain on a paper towel-lined plate.

            Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, and lime juice. Whisk until smooth and well mixed. Adjust the spice level by adding more sriracha if desired.

              Combine & Serve: In a large bowl, toss the crispy chicken pieces with the Bang Bang Sauce until well coated. Garnish with sliced green onions and sesame seeds if desired. Serve immediately with extra sauce on the side for dipping.
