Crispy Bang Bang Salmon Bites (Sweet & Spicy)

Ingredients
  

1 lb fresh salmon fillet, skinless and boneless

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 tsp garlic powder

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

1/2 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha (adjust to taste)

1 tbsp lime juice

Chopped green onions or sesame seeds for garnish

Oil for frying (vegetable or canola)

Instructions
 

Prepare the Salmon:

    - Cut the salmon into bite-sized cubes, roughly 1-inch pieces. Pat them dry with a paper towel.

      Set Up Breading Station:

        - In one bowl, place the all-purpose flour.

          - In a second bowl, whisk the eggs until well beaten.

            - In a third bowl, mix the panko breadcrumbs with garlic powder, paprika, salt, and black pepper.

              Coat the Salmon:

                - Dredge each salmon piece in the flour, shaking off the excess.

                  - Dip it into the beaten eggs, ensuring it is fully coated.

                    - Then, coat the salmon in the seasoned panko breadcrumbs, pressing gently to adhere.

                      Prepare the Bang Bang Sauce:

                        - In a separate bowl, mix the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Adjust the sriracha for desired spiciness.

                          Fry the Salmon Bites:

                            - In a large skillet, heat about 1/2 inch of oil over medium-high heat.

                              - Once the oil is hot (test by dropping a breadcrumb in; it should sizzle), carefully add the salmon bites in batches, avoiding overcrowding.

                                - Fry for about 2-3 minutes on each side, or until golden brown and crispy.

                                  - Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.
