  • 2 medium sweet potatoes peeled and diced
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 large egg
  • ½ cup milk or a plant-based alternative
  • 1 cup shredded cheese cheddar or mozzarella recommended
  • ¼ cup green onions finely chopped (optional)
  • Oil for frying vegetable or olive oil

Instructions

  • In a pot of boiling water, add the cubed sweet potatoes and boil for 15-20 minutes until tender.
