Ingredients

500g beef flank or sirloin, thinly sliced against the grain

1/2 cup cornstarch

1/4 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

2 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon sesame oil

2-3 tablespoons sweet chili sauce

2 tablespoons vegetable oil (for frying)

1 red bell pepper, sliced

1 green bell pepper, sliced

2 spring onions, chopped (optional for garnish)

Toasted sesame seeds (optional for garnish)

Instructions

Marinate the Beef: In a bowl, combine the sliced beef with soy sauce, rice vinegar, and sesame oil. Let it marinate for at least 30 minutes to tenderize and infuse flavors.

Prepare the Coating: In a separate bowl, mix the cornstarch, all-purpose flour, baking powder, salt, black pepper, and garlic powder together until well combined.

Heat the Oil: In a large skillet or wok, add vegetable oil and heat it over medium-high heat until shimmering.

Coat the Beef: Remove the beef from the marinade and let excess liquid drip off. Dredge the beef slices in the flour mixture, ensuring they are well coated. This will create the crispy texture when fried.

Fry the Beef: Working in batches, fry the coated beef slices in the hot oil for about 2-3 minutes on each side or until they are golden brown and crispy. Do not overcrowd the pan – this will cause the temperature to drop and make the beef soggy. Once done, transfer the beef to a plate lined with paper towels to drain excess oil.

Sauté the Vegetables: In the same pan, drain excess oil, leaving about a tablespoon. Add the sliced red and green bell peppers, sauté for 2-3 minutes until they are tender-crisp.

Combine and Glaze: Return the crispy beef to the pan with the sautéed bell peppers. Drizzle sweet chili sauce over the mixture and toss gently until everything is well coated and heated through.

Serve: Plate the crispy chili beef and garnish with chopped spring onions and toasted sesame seeds, if desired. Serve hot alongside steamed rice or noodle stir-fry for a complete meal.
