  • 200 g enoki mushrooms
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and freshly ground black pepper to taste
  • 1 cup cold sparkling water
  • Oil for frying vegetable or canola
  • Fresh parsley finely chopped (for garnish)
  • Soy sauce or your favorite dipping sauce for serving

Instructions

  • Carefully separate the enoki mushrooms into smaller clusters and rinse them gently under cold water.
  • Pat the mushrooms dry with a paper towel to remove excess moisture.
  • In a bowl, whisk together flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Gradually add cold sparkling water while whisking until the mixture is smooth and slightly thick.
  • Heat about 2 inches of oil in a deep frying pan to 350°F (175°C).
  • Dip each cluster of enoki mushrooms into the batter and lower them into the hot oil in small batches.
  • Fry for 2-3 minutes until golden brown and crispy.
  • Use a slotted spoon to drain excess oil and place on paper towels.
  • Sprinkle with chopped parsley and serve immediately with soy sauce or dipping sauce.
