1 lb fresh salmon fillet, skin removed

1/4 cup honey

2 tablespoons soy sauce

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup cornstarch

2 tablespoons green onions, chopped (for garnish)

Sesame seeds (for garnish)

Prep the Salmon: Cut the salmon fillet into bite-sized cubes, about 1-inch pieces. Pat them dry with a paper towel to ensure a crispy texture.

    Marinate: In a medium bowl, combine honey, soy sauce, minced garlic, minced ginger, olive oil, salt, and pepper. Add the salmon cubes and gently toss to coat. Let them marinate for 10 minutes while you prepare the cooking mixture.

      Coat in Cornstarch: After marinating, remove the salmon bites from the marinade (reserve the marinade for later). Roll each piece of salmon in cornstarch until fully coated. Shake off excess cornstarch to avoid clumps.

        Cook the Salmon: Heat a non-stick skillet over medium-high heat and add a little olive oil. Once heated, carefully place the coated salmon bites in the skillet in a single layer. Cook for about 3-4 minutes on each side or until golden brown and crispy. Do this in batches if necessary to avoid overcrowding the skillet.

          Make the Sauce: In the same skillet after removing the salmon bites, pour the reserved marinade and bring it to a simmer over medium heat. Allow it to bubble for about 2-3 minutes until slightly thickened.
