2 boneless pork chops, approximately 1/2 inch thick

Salt and freshly ground black pepper, to taste

1/2 cup all-purpose flour

1 large egg, lightly beaten

1 cup panko breadcrumbs

Vegetable or canola oil, for frying

For the Curry Sauce:

2 tablespoons vegetable oil

1 medium onion, finely diced

2 cloves garlic, minced

inch piece of fresh ginger, grated

2 medium carrots, sliced into thin rounds

2 cups vegetable broth

2 tablespoons curry powder

1 tablespoon soy sauce

1 tablespoon honey (or adjust with sugar for sweetness)

1 tablespoon Worcestershire sauce

Salt, to taste

2 green onions, finely chopped (for garnish)

For Serving:

2 cups cooked Japanese rice

Instructions

Prepare the Pork Katsu:

    Season both sides of the pork chops generously with salt and pepper.

      Create a breading station: On one plate, place the flour; in a bowl, have the beaten egg; and on another plate, spread the panko breadcrumbs.

        Take each pork chop and coat it in flour, shaking off any excess. Next, dip it into the beaten egg, ensuring full coverage, and finally, press it into the panko breadcrumbs, ensuring a thick, even coating.

          Fry the Pork:

            In a deep skillet, heat enough oil over medium-high heat to reach about 1/2 inch deep.

              Once the oil is hot—test it by dropping in a small piece of bread that should sizzle—carefully add the breaded pork chops.

                Fry the chops for approximately 4-5 minutes on each side until they are golden brown and cooked through. Once done, place the fried pork on a paper towel-lined plate to absorb excess oil.

                  Make the Curry Sauce:

                    In a medium pot, heat 2 tablespoons of vegetable oil over medium heat.

                      Add the diced onion and sauté until softened and translucent, about 5 minutes.

                        Stir in the minced garlic and grated ginger, cooking for about a minute until aromatic.

                                  Slice the crispy pork katsu into strips.
