  • 2 large russet potatoes peeled and cut into cubes
  • 1 cup shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup cream cheese softened to room temperature
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • ½ cup all-purpose flour
  • 2 large eggs beaten until frothy
  • 1 cup breadcrumbs panko preferred
  • Vegetable oil for frying
  • Fresh parsley chopped (for garnish)

Instructions

  • In a large pot, boil salted water and cook cubed potatoes until fork-tender, about 15-20 minutes.
  • Drain the potatoes and let them cool slightly before mashing until smooth.
  • Mix in cheddar cheese, Parmesan cheese, cream cheese, garlic powder, onion powder, salt, and pepper until creamy.
  • Form the mixture into balls or oval shapes, about 2 tablespoons each.
  • Set up a breading station with flour, beaten eggs, and breadcrumbs in separate bowls.
  • Roll each croquette in flour, dip in eggs, and coat with breadcrumbs.
  • Heat vegetable oil in a skillet to 350°F (175°C) and fry croquettes in batches until golden brown, about 3-4 minutes per side.
  • Transfer cooked croquettes to a paper towel-lined plate to absorb excess oil.
