Crock Pot Creamy Chicken Parmesan Soup

1.5 lbs boneless, skinless chicken breasts

8 oz cream cheese, softened

4 cups chicken broth

1 cup grated Parmesan cheese

1 can (14.5 oz) diced tomatoes, undrained

1 cup heavy cream

1 cup Italian-style frozen vegetables (such as carrots, peas, and green beans)

3 cloves garlic, minced

1 tsp dried basil

1 tsp dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cooked pasta or crusty bread (for serving)

Instructions
 

Prep the Chicken: Place the chicken breasts at the bottom of the crock pot.

    Mix the Base: In a medium bowl, mix together the softened cream cheese, chicken broth, grated Parmesan cheese, diced tomatoes, heavy cream, minced garlic, basil, oregano, salt, and pepper until well combined.

      Combine Ingredients: Pour the cream cheese mixture over the chicken in the crock pot, making sure the chicken is well coated.
