  • 2 lbs russet potatoes peeled and sliced thinly
  • 1 lbs beef steak sirloin or ribeye, thinly sliced
  • 1 large onion thinly sliced
  • 1 large green bell pepper thinly sliced
  • 1 cup mushrooms thinly sliced
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup beef broth
  • 2 cups shredded provolone cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil

Instructions

  • Peel and slice the russet potatoes thinly.
  • Thinly slice the beef steak, onion, green bell pepper, and mushrooms.
  • Mince the garlic.
  • Heat olive oil in a skillet over medium heat and sauté onions, bell peppers, and mushrooms for 5-7 minutes.
  • Add minced garlic and cook for an additional minute.
  • Layer half of the sliced potatoes in the crockpot, followed by half of the seasonings and sautéed vegetables, then half of the sliced beef.
  • Repeat the layering process with the remaining ingredients.
  • Pour beef broth evenly over the casserole.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
  • Sprinkle provolone and mozzarella cheese on top 30 minutes before serving.
