1.5 lbs ribeye steak, cubed

4 medium russet potatoes, diced

1 small onion, chopped

3 cloves garlic, minced

1 cup beef broth

1 cup shredded cheddar cheese

1/2 cup sour cream

1/2 cup milk

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper, to taste

4 strips of bacon, cooked and crumbled

Green onions, chopped, for garnish

Prep the Ingredients: Start by preparing all your ingredients. Dice the potatoes, cube the ribeye steak, chop the onion, and mince the garlic.

    Layer in the Crockpot: Place the cubed steak at the bottom of the crockpot. Then layer the diced potatoes, chopped onion, and minced garlic on top.

      Season: In a bowl, combine the beef broth, smoked paprika, garlic powder, onion powder, thyme, salt, and pepper. Pour this mixture over the layered ingredients in the crockpot.

        Cook: Cover the crockpot and cook on low for 6-8 hours, or on high for 4-5 hours. The steak should be tender and the potatoes cooked through.

          Make the Creamy Sauce: About 30 minutes before serving, in a small bowl, mix together the shredded cheddar cheese, sour cream, and milk until smooth. Stir this mixture into the crockpot and mix gently to combine.
