2 medium cucumbers, thinly sliced

1 large apple (preferably a tart variety like Granny Smith), cored and diced

1/2 cup red bell pepper, diced

1/4 cup thinly sliced red onion

1/4 cup chopped fresh parsley

1/4 cup walnuts, chopped (optional)

1/4 cup plain Greek yogurt

1 tablespoon apple cider vinegar

1 tablespoon honey

Salt and pepper to taste

A squeeze of lemon juice
