Ingredients
  

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 3 cups fresh spinach roughly chopped
  • 1 medium zucchini thinly sliced
  • 1 medium bell pepper diced
  • 1 cup mushrooms thinly sliced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning blend
  • Salt and freshly ground black pepper to taste
  • 2 cups white sauce

Instructions

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat, then add garlic, zucchini, bell pepper, and mushrooms; sauté for 5-7 minutes.
  • Add spinach and cook until wilted, then season with Italian seasoning, salt, and pepper; set aside.
  • In a bowl, mix ricotta cheese with half of the Parmesan cheese and season with salt and pepper.
  • Spread a thin layer of white sauce in a 9x13 inch baking dish.
  • Layer 3 noodles, half of the ricotta mixture, half of the sautéed vegetables, and a sprinkle of mozzarella.
  • Repeat with another 3 noodles, white sauce, remaining ricotta, remaining vegetables, and more mozzarella.
  • Finish with a final layer of noodles, remaining white sauce, and top with remaining mozzarella and Parmesan.
  • Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 15 minutes.
  • Let cool for 10 minutes before slicing and serve warm.
