Ingredients

For the Chicken Cordon Bleu:

4 boneless, skinless chicken breasts

4 slices of ham (preferably black forest or prosciutto)

4 slices of Swiss cheese

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon paprika

Oil for frying (vegetable or olive oil)

For the Creamy Swiss Cheese Sauce:

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup milk (whole or 2%)

1 cup shredded Swiss cheese

1 teaspoon Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken:

    - Preheat your oven to 375°F (190°C).

      - Place each chicken breast between two sheets of plastic wrap and pound to about 1/2 inch thickness using a meat mallet or rolling pin. Season both sides with salt, pepper, garlic powder, and paprika.

        Assemble the Cordon Bleu:

          - Lay a slice of ham and a slice of Swiss cheese on each chicken breast. Starting from one end, carefully roll the chicken tightly with the filling inside. Secure with toothpicks if necessary to keep the filling from spilling out.

            Breading Process:

              - Prepare a breading station: Place flour in one shallow dish, beat the eggs in a second dish, and spread out breadcrumbs in a third dish.

                - Dredge each chicken roll in flour, shaking off the excess, then dip into the beaten eggs, and finally coat in breadcrumbs. Ensure they are well-coated.

                  Fry the Cordon Bleu:

                    - In a large skillet over medium heat, add enough oil to cover the bottom of the pan. Once hot, carefully add the chicken rolls to the pan, cooking for about 3-4 minutes on each side until golden brown.

                      - Once browned, transfer the rolls to a baking dish and finish cooking them in the preheated oven for about 20-25 minutes, or until the internal temperature reaches 165°F (74°C).

Make the Creamy Swiss Cheese Sauce:

                          - In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1-2 minutes until lightly golden.

                            - Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, whisking constantly, until the mixture thickens (about 5-7 minutes).

                              - Reduce the heat to low and stir in the shredded Swiss cheese and Dijon mustard. Mix until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.

                                Serve:

                                  - Remove toothpicks from the chicken rolls if used. Slice the chicken cordon bleu into rounds and serve drizzled with the creamy Swiss cheese sauce. Garnish with chopped parsley.
