4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup ricotta cheese

1/2 cup mozzarella cheese, shredded

1/4 cup parmesan cheese, grated

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

Olive oil for cooking

Toothpicks or kitchen twine (for securing)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a mixing bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, parmesan cheese, minced garlic, onion powder, oregano, salt, and pepper. Mix well until all ingredients are fully combined.

      Prepare the Chicken: Take each chicken breast, and using a sharp knife, create a pocket by slicing horizontally through the middle, being careful not to cut all the way through.

        Stuff the Chicken: Generously fill each chicken pocket with the prepared spinach and cheese mixture. Use toothpicks or kitchen twine to secure the openings of the chicken breasts to keep the filling inside.

          Sear the Chicken: In a large oven-safe skillet, heat a drizzle of olive oil over medium-high heat. Once hot, add the stuffed chicken breasts and sear for about 3-4 minutes on each side, or until golden brown.

            Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and has an internal temperature of 165°F (75°C).

              Rest and Serve: Once done, remove the skillet from the oven and allow the chicken to rest for about 5 minutes before serving. This helps the juices redistribute and keeps the chicken moist. Remove the toothpicks or twine, slice, and serve hot.
