3 cups all-purpose flour

1 teaspoon salt

1 teaspoon turmeric powder (for color and flavor)

1/2 cup cold unsalted butter, cubed

1/2 cup cold water (adjust as needed)

For the Filling:

1 pound ground beef

1 tablespoon vegetable oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon ginger, minced

1 Scotch bonnet pepper, finely chopped (adjust to taste)

1 teaspoon dried thyme

1 teaspoon allspice

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons soy sauce

1/4 cup beef broth or stock

1/4 cup breadcrumbs (optional, for added texture)

For Egg Wash:

1 egg, beaten with 1 tablespoon water

Prepare the Dough: In a large bowl, mix flour, salt, and turmeric powder. Add cold butter and rub with fingers until the mixture resembles breadcrumbs. Gradually add cold water, mixing until a smooth dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Make the Filling: In a skillet, heat vegetable oil over medium heat. Add onions and sauté until translucent. Stir in garlic, ginger, and Scotch bonnet pepper, cooking for another 2 minutes.

      Cook the Meat: Add the ground beef to the skillet, breaking it up as it cooks. Once browned, season with thyme, allspice, salt, and black pepper. Stir in soy sauce and beef broth; simmer for about 5-7 minutes until the mixture thickens. Add breadcrumbs if using. Remove from heat and let cool.

        Assemble the Patties: Preheat the oven to 375°F (190°C). On a floured surface, roll out the dough to about 1/8-inch thickness. Cut into circles (about 5-6 inches in diameter). Place a spoonful of the beef mixture on one half of each circle. Brush the edges with egg wash, fold over, and seal by pressing with a fork.

          Bake: Place the patties on a baking sheet lined with parchment paper. Brush the tops with the remaining egg wash. Bake for 25-30 minutes or until golden brown.
