4 boneless, skinless chicken thighs (or breasts)

1 cup long-grain white rice

1 cup chicken broth

1 medium cucumber, diced

1 cup plain Greek yogurt

2 cloves garlic, minced

1 tablespoon fresh lemon juice

1 tablespoon olive oil

1 teaspoon dried dill

1 teaspoon salt

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Casserole Dish: In a large casserole dish, add the uncooked rice, chicken broth, salt, and pepper. Stir to combine.

      Add Chicken: Place the chicken thighs (or breasts) on top of the rice mixture. Drizzle the olive oil over the chicken.

        Make the Tzatziki Sauce: In a separate bowl, combine the Greek yogurt, diced cucumber, minced garlic, lemon juice, dried dill, and a pinch of salt and pepper. Gently stir until well combined.

          Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 35-40 minutes, or until the chicken is fully cooked and the rice is tender.

            Add Tzatziki: Once the chicken is done, remove the foil, and spread the tzatziki sauce generously over the chicken. Return to the oven uncovered for an additional 5-7 minutes to warm the sauce.
