Ingredients

4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 large onion, finely chopped

4 cloves garlic, minced

1 cup chicken broth

1 cup barbecue sauce (your favorite brand or homemade)

2 tablespoons apple cider vinegar

1 tablespoon brown sugar

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Hamburger buns or tortillas for serving

Instructions

Sauté the Aromatics: Heat the olive oil in a Dutch oven over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for an additional minute, until fragrant.

Prepare the Chicken: Season the chicken breasts with salt and pepper and nestle them into the Dutch oven with the sautéed onions and garlic.

Add Liquids: Pour the chicken broth, barbecue sauce, and apple cider vinegar over the chicken. Add the brown sugar, smoked paprika, cumin, and chili powder, stirring to combine everything well.

Cook the Chicken: Cover the Dutch oven with its lid and bring the mixture to a gentle boil over medium-high heat. Once boiling, reduce the heat to low, allowing it to simmer for about 45 minutes, or until the chicken is cooked through and tender.

Shred the Chicken: Remove the chicken breasts from the pot and place them on a cutting board. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken to the Dutch oven and stir it into the sauce, letting it simmer for another 10 minutes to soak up the flavors.

Serve: Serve the pulled chicken on hamburger buns or tortillas, garnished with fresh cilantro if desired. Enjoy with extra barbecue sauce on the side!
