2 cups old-fashioned rolled oats

1 cup peanut butter (smooth or crunchy, as per preference)

1/3 cup honey or maple syrup

1/2 cup brown sugar (packed)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup chocolate chips (optional)

1/4 cup chopped nuts or seeds (optional)

1/4 cup dried fruits (optional)

Instructions
 

Prepare the Baking Dish: Line an 8x8 inch (or similar) baking dish with parchment paper, allowing some overhang for easy removal later.

    Mix Wet Ingredients: In a large microwave-safe bowl, combine the peanut butter and honey (or maple syrup). Microwave on high for about 30 seconds, just until melted and easy to stir. Remove and stir in the brown sugar, vanilla extract, and salt until fully combined.

      Add Oats: Gradually add the rolled oats to the peanut butter mixture. Stir until the oats are evenly coated. If using chocolate chips, nuts, or dried fruit, fold them in at this stage.

        Press the Mixture: Transfer the mixture to the prepared baking dish. Using a spatula or your hands, firmly press the mixture down into an even layer. The more compact it is, the better the bars will hold together!

          Microwave: Microwave the pressed mixture on high for 1 to 2 minutes, or until it is firm and slightly puffed. Start with 1 minute and check; if it’s not quite firm, continue to microwave in 15-second intervals until done.

            Cool: Allow the granola mixture to cool at room temperature for about 30 minutes, then place in the refrigerator for at least 1 hour to firm up further.

              Cut and Serve: Once cooled and set, lift the granola out of the dish using the parchment paper overhang. Cut into bars or squares of your desired size. Enjoy as a healthy snack or breakfast on the go!
