Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, beat together softened butter and granulated sugar until light and fluffy.
Add the egg and vanilla extract, mixing until smooth.
In a separate bowl, whisk together flour, baking powder, and sea salt.
Gradually mix the dry ingredients into the wet mixture until a soft dough forms.
Divide the dough into two portions, wrap in plastic, and chill for 30 minutes.
Roll out one portion on a floured surface to ¼ inch thick and cut out shapes.
Transfer the cookies to the baking sheet and bake for 8-10 minutes until edges are golden.
Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
