2 large cucumbers, thinly sliced

1/2 red onion, thinly sliced

1/2 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon sugar

1 teaspoon grated ginger

1 garlic clove, minced

1 tablespoon sesame seeds

1/4 teaspoon red pepper flakes (optional)

Fresh cilantro, for garnish

Instructions
 

In a large mixing bowl, combine the sliced cucumbers and red onion.

    In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, grated ginger, minced garlic, and red pepper flakes until the sugar dissolves.
