Easy Asian Cucumber Salad

2 large cucumbers, thinly sliced

1 teaspoon salt

1 tablespoon rice vinegar

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon sugar or honey

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame seeds

2 green onions, chopped

Red pepper flakes (to taste)

Fresh cilantro leaves for garnish (optional)

Instructions

Start by slicing the cucumbers thinly and place them in a bowl. Sprinkle the salt over the cucumbers and let them sit for about 15 minutes. This will draw out excess moisture and make the cucumbers crunchy.

    While the cucumbers are sitting, prepare the dressing. In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar (or honey), minced garlic, grated ginger, and red pepper flakes until well combined.

      After 15 minutes, drain any excess liquid from the cucumbers and pat them dry with a clean kitchen towel.

        Add the drained cucumbers to a large mixing bowl. Pour the dressing over the cucumbers and toss gently to coat them evenly.

          Sprinkle sesame seeds and chopped green onions on top for added flavor and crunch. Toss lightly to incorporate.

            Garnish with fresh cilantro leaves if desired.

              Chill the salad in the fridge for about 10-15 minutes before serving to enhance the flavors and serve cold.
