3 ripe peaches, peeled and sliced

1 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 teaspoon almond extract (optional)

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup buttermilk

1 teaspoon ground cinnamon

1/4 cup chopped pecans or walnuts (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

    Prepare the Peaches: In a medium bowl, toss the sliced peaches with 1 tablespoon of brown sugar and set aside for at least 10 minutes. This will help release their juices.

      Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using a hand mixer or stand mixer until light and fluffy.

        Add Eggs and Extracts: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and almond extract if using.

          Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.

            Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just combined. Avoid overmixing.

              Fold in Peaches: Gently fold in the sliced peaches and chopped nuts (if using) into the batter.

                Pour into Pan: Pour the batter into the prepared cake pan and spread it evenly.

                  Bake: Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.

                    Cool and Serve: Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream.
