1 can (15 oz) chickpeas, drained and rinsed

1 large cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

2 tablespoons olive oil

1 tablespoon red wine vinegar

1 teaspoon lemon juice

Salt and pepper, to taste

Instructions
 

In a large mixing bowl, combine the drained chickpeas, diced cucumber, halved cherry tomatoes, and finely chopped red onion.

    Add the crumbled feta cheese and chopped parsley to the bowl with the vegetables.

      In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, salt, and pepper until well combined.

        Pour the dressing over the chickpea mixture and gently toss until everything is well coated.

          Adjust seasoning with more salt and pepper if needed.

            Let the salad sit for about 10-15 minutes to allow the flavors to meld together before serving.
