Easy Chipotle Ranch Grilled Chicken Burrito

Ingredients
  

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon chipotle chili powder

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

½ cup ranch dressing

1 tablespoon fresh lime juice

1 cup cooked rice (white or brown)

1 cup black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 avocado, sliced

1 cup fresh spinach or lettuce

4 large flour tortillas

Fresh cilantro for garnish (optional)

Instructions
 

Marinate the Chicken: In a small bowl, combine the olive oil, chipotle chili powder, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub the spice mixture all over the chicken breasts and let it marinate for at least 30 minutes or up to 2 hours for better flavor.

    Grill the Chicken: Preheat your grill or a grill pan on medium-high heat. Once hot, add the marinated chicken and grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Once cooked, remove from heat and let it rest for 5 minutes before slicing it into strips.

      Prepare the Chipotle Ranch Dressing: In a bowl, mix the ranch dressing with lime juice and a pinch of chipotle chili powder for extra flavor. Adjust seasoning according to your preference.

        Assemble the Burritos:

          - Lay a tortilla flat on a clean surface.

            - In the center, layer about ¼ cup of cooked rice, ¼ cup of black beans, ¼ cup of corn, a handful of spinach or lettuce, sliced avocado, and grilled chicken strips.

              - Drizzle with the chipotle ranch dressing and sprinkle with shredded cheddar cheese.

                Wrap the Burrito: Fold in the sides of the tortilla and then roll it from the bottom up to create a tight burrito. Make sure the filling is secure inside.

                  Optional - Toast the Burrito: If desired, you can toast the assembled burrito on the grill or in a skillet for 2-3 minutes on each side until golden brown and crispy.
