Ingredients

2 boneless, skinless chicken breasts

1/4 cup chipotle ranch dressing

1 cup cooked white rice (or brown rice)

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 medium tomato, diced

1/2 avocado, sliced

1/4 cup fresh cilantro, chopped

4 large flour tortillas

Lime wedges for serving

Salt and pepper to taste

Cooking spray or olive oil for grilling

Instructions

Marinate the Chicken: In a bowl, mix the chipotle ranch dressing with a pinch of salt and pepper. Add the chicken breasts, ensuring they are well-coated. Cover and let marinate for at least 30 minutes (or up to 2 hours for more flavor).

Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Lightly grease with cooking spray or olive oil. Remove the chicken from the marinade and place on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove from the grill and allow to rest for 5 minutes before slicing.

Prepare the Burrito Filling: In a large bowl, combine the cooked rice, black beans, corn, diced tomato, and chopped cilantro. Mix gently and season with salt and pepper to taste.

Assemble the Burritos: Lay a flour tortilla flat on a clean surface. Start by adding a generous scoop of the rice mixture in the center. Then, layer on some grilled chicken slices and a few avocado slices. Top with shredded cheddar cheese.

Wrap it Up: Fold the sides of the tortilla inward, then roll from the bottom up to enclose the filling tightly. Repeat with the remaining tortillas and filling.

Grill the Burritos: Return the wrapped burritos to the grill for 2-3 minutes on each side until they are golden brown and the cheese has melted.

Serve: Slice each burrito in half. Serve warm with lime wedges and extra chipotle ranch dressing on the side for drizzling.
