1 lb (450g) chicken breast, cut into bite-sized pieces

1/2 cup unsalted butter, melted

4 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

1/2 tsp onion powder

1 tsp dried thyme

Salt and pepper to taste

1 tbsp fresh parsley, chopped (for garnish)

Juice of 1 lemon

1/4 cup chicken broth

2 cups cooked rice or mashed potatoes (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces with half of the melted butter, garlic, smoked paprika, cayenne pepper, onion powder, thyme, salt, and pepper. Mix well to ensure the chicken is evenly coated. Let it marinate for at least 30 minutes (or longer in the fridge for stronger flavors).

    Cook the Chicken: In a large skillet over medium-high heat, add the marinated chicken. Cook for 5-7 minutes until the chicken is browned and cooked through, stirring occasionally.
