Easy Crockpot Cheesy Beef and Noodles

1.5 pounds beef chuck roast, cut into 1-inch pieces

1 onion, diced

3 cloves garlic, minced

1 cup beef broth

1 cup heavy cream

2 cups egg noodles

2 cups shredded cheddar cheese

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet over medium-high heat, brown the beef chunks on all sides (about 5-7 minutes). Transfer the browned beef to the crockpot.

    In the same skillet, add the diced onions and minced garlic. Sauté for 2-3 minutes until soft and fragrant, then transfer to the crockpot with the beef.

      Pour the beef broth and heavy cream into the crockpot. Add Worcestershire sauce, dried thyme, salt, and pepper. Stir to combine.

        Cover and cook on low for 7-8 hours or high for 4-5 hours, until the beef is tender.

          About 30 minutes before serving, add the egg noodles to the crockpot and stir well. Cover and cook until the noodles are cooked through.

            Once the noodles are tender, stir in the shredded cheddar cheese until melted and combined.

              Serve hot, garnished with fresh parsley.
