Ingredients
  

2 large cucumbers

1 cup cherry tomatoes, halved

8 ounces fresh mozzarella balls (bocconcini), halved

1/4 cup fresh basil leaves, torn

3 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

Optional: 1 teaspoon honey for a touch of sweetness

Instructions
 

Start by washing the cucumbers thoroughly. Slice them into thin rounds, about 1/4 inch thick, and place them in a large mixing bowl.

    Add the halved cherry tomatoes and mozzarella balls to the bowl with the cucumber.

      Toss in the torn basil leaves, making sure to distribute them evenly throughout the salad.

        In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, salt, and pepper. If you opted to use honey, add it now for some extra sweetness.

          Drizzle the dressing over the salad and gently toss everything together until well combined. Be careful not to mash the mozzarella.

            Taste the salad and adjust seasoning if necessary. You can add more salt, pepper, or even a splash more of balsamic vinegar based on your preference.

              Let the salad sit for about 10-15 minutes to allow the flavors to meld together, or serve immediately for the freshest taste.
