For the Chicken Skewers:

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch pieces

2 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon brown sugar

2 cloves garlic, minced

1 tablespoon freshly grated ginger

1 tablespoon lime juice

1 teaspoon red pepper flakes (adjust for spice preference)

8-10 skewers (soaked in water for 30 minutes if wooden)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup coconut milk

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon brown sugar

1 clove garlic, minced

1 teaspoon red chili paste (like Sriracha, optional for heat)

Chopped roasted peanuts and cilantro for garnish

Instructions
 

Prepare the Chicken Marinade: In a bowl, combine soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, lime juice, and red pepper flakes. Mix well to dissolve the sugar and create a marinade.

    Marinate the Chicken: Add the chicken pieces to the marinade, mixing to ensure all the chicken is well-coated. Cover the bowl with plastic wrap and marinate in the fridge for at least 30 minutes (or up to 2 hours for more flavor).

      Prepare the Peanut Sauce: In a separate bowl, whisk together the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, minced garlic, and red chili paste until smooth and combined. Adjust the consistency with more coconut milk if it’s too thick. Set aside.

        Skewer the Chicken: Thread the marinated chicken onto the soaked skewers. Leave a little space between each piece for even cooking.

          Preheat the Grill: Heat your grill to medium-high heat (about 400°F or 200°C). Lightly oil the grill grates to prevent sticking.

            Grill the Skewers: Place the chicken skewers on the grill. Grill for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
