Easy Healthy Broccoli Pasta

8 ounces whole wheat pasta (spaghetti or penne)

2 cups fresh broccoli florets

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1/2 cup vegetable broth (or pasta water)

1/2 cup grated parmesan cheese (or nutritional yeast for a vegan option)

Salt and pepper to taste

Juice of 1 lemon

Zest of 1 lemon (optional)

Fresh basil leaves for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. During the last 3 minutes of cooking, add the broccoli florets to the pot. Drain the pasta and broccoli, reserving 1/2 cup of the pasta water (or use vegetable broth).

    Sauté the Garlic: In the same pot, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant, being careful not to burn the garlic.

      Combine Ingredients: Add the drained pasta and broccoli back into the pot with the garlic. Pour in the reserved pasta water or vegetable broth and stir to combine.

        Add Cheese and Seasoning: Sprinkle in the grated parmesan cheese (or nutritional yeast) and mix well until evenly distributed. Season with salt and pepper to taste. Stir in the lemon juice and lemon zest if using.
