Ingredients

4 boneless, skinless chicken thighs

1 pound baby potatoes, halved

1 cup cherry tomatoes, halved

1 medium onion, sliced

4 cloves garlic, minced

1/4 cup olive oil

1 teaspoon dried oregano

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Marinade: In a large bowl, whisk together olive oil, minced garlic, dried oregano, Italian seasoning, red pepper flakes, salt, and pepper.

Toss the Ingredients: Add the chicken thighs to the bowl and coat them well with the marinade. Then, add the halved baby potatoes, sliced onions, and cherry tomatoes. Toss everything together until well mixed.

Arrange in Baking Dish: Place the marinated chicken and vegetables in a single layer in a large baking dish or sheet pan. Make sure the chicken is skin-side up.

Bake: Bake in the preheated oven for 30-35 minutes or until the chicken is cooked through (internal temperature of 165°F or 74°C) and the potatoes are fork-tender. Stir halfway through to ensure even cooking.

Broil (Optional): For a crispy finish, switch the oven to broil mode during the last 5 minutes of cooking.

Serve: Once done, remove from oven, garnish with fresh basil, and sprinkle with grated Parmesan cheese if desired. Serve hot and enjoy your delightful Italian meal!
