Ingredients

8 oz (about 225 g) spaghetti or your choice of pasta

2 cups broccoli florets

4 cloves garlic, minced

4 tbsp unsalted butter

¼ tsp red pepper flakes (optional)

4 cups vegetable broth (or water)

1 cup grated Parmesan cheese (plus more for serving)

Salt and black pepper, to taste

Juice of ½ lemon

Fresh parsley, chopped (for garnish)

Instructions

In a large pot, combine the pasta, broccoli florets, minced garlic, red pepper flakes (if using), and vegetable broth.

Season with a pinch of salt and black pepper, then bring the mixture to a boil over medium-high heat.

Once boiling, reduce the heat to medium-low, cover the pot, and simmer for about 8-10 minutes, stirring occasionally, until the pasta is al dente and most of the broth has been absorbed.

Remove the pot from heat and stir in the butter, allowing it to melt and coat the pasta evenly.

Add the grated Parmesan cheese and lemon juice, mixing until creamy and well combined. Adjust seasoning with salt and pepper as needed.

Serve the pasta in bowls, topped with additional Parmesan cheese and garnished with fresh parsley.
