12 large pasta shells

1 cup ricotta cheese

1 cup fresh spinach, chopped

½ cup grated parmesan cheese

1 ½ cups marinara sauce

1 egg, beaten

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

½ cup shredded mozzarella cheese (for topping)

Fresh basil for garnish (optional)

Instructions
 

Cook the shells: Bring a large pot of salted water to a boil. Add the pasta shells and cook until al dente, according to package instructions. Drain and set aside to cool slightly.

    Prepare the filling: In a large mixing bowl, combine ricotta cheese, chopped spinach, grated parmesan, beaten egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.

      Fill the shells: Preheat your oven to 375°F (190°C). Carefully fill each cooked pasta shell with the ricotta and spinach mixture, about 1 to 2 tablespoons per shell.

        Assemble the dish: Spread half of the marinara sauce evenly on the bottom of a baking dish. Place the stuffed shells on top of the sauce, seam side up. Pour the remaining marinara sauce over the shells.

          Top with cheese: Sprinkle shredded mozzarella cheese over the entire dish.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

              Garnish and serve: Remove from the oven and let it sit for a few minutes. Garnish with fresh basil leaves if desired. Serve warm and enjoy your healthy veggie dinner!
