Ingredients

20 jumbo pasta shells

1 cup ricotta cheese

2 cups fresh spinach, chopped

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese, divided

1 egg, beaten

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 jar (24 oz) marinara sauce

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Pasta Shells: Bring a large pot of salted water to a boil. Add the jumbo shells and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

Prepare the Filling: In a large bowl, combine the ricotta cheese, chopped spinach, 1/4 cup Parmesan cheese, 1/2 cup mozzarella cheese, beaten egg, garlic powder, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Stuff the Shells: Take each cooked shell and fill it generously with the spinach and ricotta mixture, about 2 tablespoons per shell. Place the stuffed shells in a 9x13 inch baking dish.

Add the Sauce: Pour the marinara sauce evenly over the stuffed shells, making sure to cover them completely. Sprinkle the remaining mozzarella and Parmesan cheese on top.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm and enjoy your delicious, healthy veggie dinner!
