Easy Spinach & Ricotta Stuffed Shells

Ingredients
  

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 cups marinara sauce

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, boil salted water and cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.

      Prepare the Filling: In a mixing bowl, combine chopped spinach, ricotta cheese, 1/2 cup of mozzarella, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.

        Stuff the Shells: Carefully stuff each jumbo shell with about 2 tablespoons of the spinach and ricotta filling.

          Prepare the Baking Dish: Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish. Place the stuffed shells in a single layer on top of the sauce.

            Add More Sauce: Pour the remaining marinara sauce over the stuffed shells. Sprinkle the remaining 1/2 cup of mozzarella cheese evenly over the top.

              Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is melty and slightly golden.

                Garnish & Serve: Remove from the oven, let it cool for a few minutes, and garnish with fresh basil if desired. Serve hot and enjoy your delicious stuffed shells!
