Easy Tuscan Chicken Pasta (40-Minutes)

2 boneless, skinless chicken breasts

8 oz penne pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1 cup heavy cream

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and let rest before slicing.

      Make the Sauce: In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for 30 seconds until fragrant. Stir in the cherry tomatoes and cook for 3-4 minutes until they start to soften.

        Add the Spinach and Cream: Add the fresh spinach to the skillet, stirring until it wilts (about 1-2 minutes). Lower the heat and pour in the heavy cream, mixing well. If the sauce is too thick, add a bit of the reserved pasta water until desired consistency is reached.

          Combine Pasta and Chicken: Slice the cooked chicken and add it to the skillet along with the drained penne pasta. Toss everything together until well coated in the creamy sauce. Season with red pepper flakes, salt, and pepper to taste.

            Serve: Remove from heat and stir in grated Parmesan cheese until melted and combined. Serve hot, garnished with fresh basil leaves.
